Remember my New Year’s resolutions about getting healthy and fit etc? Well, I’ve not shown my face anywhere near the gym yet, but eating-wise, things are slowly improving! I still find it hard to make enough time for cooking and proper grocery shopping, but my meal planner works wonders every now and then and dinners like this one are the result. I am not a good cook (far from it) and for me, it’s already a huge accomplishment if I don’t eat bread or muesli for dinner. So when I do prepare something, I want it to be healthy and full of fresh vegetables. Now you don’t hear me say that these quesadillas are the most healthy thing ever (I’m very much aware that the tortillas themselves are not healthy at all), but I love how well they go with a salad, the fact that they don’t include meat, the huge amount of avocados needed for the guacemole and the possibility to easily store some for the next day.

For the Dutchies, you’ll find the original recipe here (I adapted it a little bit, but the main info is there). For the non-Dutchies: cover a tortilla with guacemole (I made mine simply with a seasoning mix and fresh avocados) and grated cheese and bake them in the oven. In the mean time, prepare a salad just how you like it! Mine includes lambs lettuce, red onion, cherry tomatoes and cucumber. Of course, you can put the salad and the unbaked tortillas in the fridge for the next day. Nomnom!
